Restaurant style tomato curry sauce made with tomato puree and spices for curried pizza
This is our restaurant recipe. We use #10 can of 1.06 specific gravity tomato puree. One #10 can has 12 cups. We will just use ½ can or 6 cups here.
Ingredients
1. Cooking oil: ¼ cup
1. Large Onions: 2
2. Fresh Garlic: 6 Cloves minced
3. Curry powder: 2 Tablespoons
Substitution
Cumin Powder: 1 Tablespoon
Coriander powder: 2 teaspoons
Turmeric Powder: ¼ teaspoon
Fenugreek seed powder: ½ teaspoon
Ginger root powder: ½ teaspoon
4. Puréed tomatoes: 6 cups
5. Ground Cloves: ½ teaspoon
7. Ground Cinnamon: ½ teaspoon
8. Ground Cardamom seeds: ½ teaspoon
9. Salt: 7/8 teaspoon
10. Cayenne pepper powder: ½ teaspoon
11. Black pepper powder: 1 teaspoon
12. Lime juice: ½ teaspoon
Method
1. Heat a heavy sauce pan with oil. Add ground onions. Sauté till most most of the moisture is gone. It should turn into muddy greenish paste. Don't brown.
2. Add garlic. Sauté about 5 minutes.
3. Add Curry powder. Sauté about 30 seconds to one minute.
4. Add remaining ingredients. Heat to at least 160º F. Simmer at low for 15 minutes.
